Agei is one of the famous snacks in Danshuei. The name Agei is actually from Japanese, abura-age, which means oily tofu. Walking along Danshuei Old Street, you will see a lot of stores selling A-ei.
Cooks will scoop the middle of tofu, and then stuff marinated or minced pork and Dong-fen (literally meaning green bean noodles) into the hollow tofu. Second, cover fish batter on tofu’s top. Thirdly, steam it until it is ready to eat. At last, sprinkle sweet and spicy sauce made specially.

At first, Agei was made by Jin-un Yiang Jhen in 1965. She thought originally that it is more economical that she uses extra ingredients to make Agei. Unexpectedly, Agei becomes the popular snack now.
