Fongkeng Village in Fenyuan Township is the earliest rice noodle production district in Taiwan. Some well-known rice noodles in other cities and counties come from factories whose techniques and skills were taught by Fongkeng rice noodle masters.
According to the fifth generation of CiFa Rice Noodle Factory Mr. Ke’s statement, the ancestors were once rice noodle masters from the mainland of China migrated to Taiwan and settled in Fongkeng Village, Fenyuan Township around two hundred years ago. Due to the advantages of clear mountain spring water and hilly landscape, it is a totally perfect location for drying rice noodles. Therefore, a hundred years of rice noodle industries was gradually clustered in Fongkeng Village, starting from three to five people family business until now eight rice noodle factories.
Fongkeng Village is located on the central west of Fenyuan Township and covered an area around 2.20 square kilometres, which is about 1.2 kilometres away from Shekou Village, the city center. Fongkeng Village is between 160 and 180 meters above sea level. Fongkeng Village is next to Huatan Township on the west and Dapu Village and Jioushe Village on the north.
The original name of Fongkeng Village was called “Fongtzaikeng” in the early days. According to the locals’ statement, Fongkeng used to have big maple trees all over the mountains and hills; hence, that is where the name comes from. From Fongkeng community, you can overlook beautiful scenery of Jiujiuyan Peak and Taichung basin.

The heritage of Fongkeng rice noodle production is followed by traditional processes Fongkeng rice noodle is consisted of rice, corn and raw starch. Through the processes of soaking, grinding, pressing, hot water cooking and cooling, rice noodle will be placed on flat bamboo sieve once it has its flexibility. The purpose of placing rice noodle on flat bamboo sieves is to wait for stronger wind to blow-dry it.
Fongkeng rice noodle unlike Hsinchu rice noodle is much crystal clear and shining before it is dried. Fongkeng rice noodle contained a small amount of water is also known as “water rice noodle”. Its unique and chewy taste is very suitable for various cooking styles. Plus, Fongkeng rice noodle has been warmly praised by many foreigners and the locals as well.
