2009 Taiwan Culinary Exhibition was divided into several different theme exhibitions. Among that, Suzhou Water Country Riverboat Banquet was one of the most eye-catching spotlights at the scene. Over dozen of Suzhou famous dishes displayed in front of the public; each dish was delicate and unique. Suzhou Water Country Riverboat Banquet can be described as one of the most popular exhibitions.

This year, the organizer had particularly invited Pine Crane Pavilion (Songhelou) to perform its extraordinary culinary skills. Pine Crane Pavilion has over 200 years of history. Suzhou-style cuisine is tended to focus on seasonal seafood, material selection, color, flavour, taste, appearance and varieties. Seafood and glutinous rice feature prominently in Suzhou-style cuisine. At the scene, there were a total of 60 famous Suzhou-style dishes.

Suzhou-style dishes are rich in style, such as “Spring Bamboo Shoots after Rain”, “Eight Treasure Gourd”, “Cocoa Hedgehog”, “Goldfishes in Green Wave”, “Farmer’s Corn”, etc. Different ingredients can transform into various dishes. “Spring Bamboo Shoots after Rain”, for example, is made of multiple layers of sliced pork belly. Whether it is about the color or appearance, it totally looks just like real bamboo shoots!

【台灣美食展】匠心獨具 蘇州名菜大觀園

  2009台灣美食展分成諸多展區,其中中國大陸特展以蘇州水鄉船宴為主題,數十道蘇州名菜就擺在民眾眼前,樣樣精緻,匠心獨具,是非常受歡迎的展覽區域。

  今年蘇州水鄉船宴特別邀請迄今已有兩百多年歷史的松鶴樓擔綱,將蘇式菜肴「講究時令海鮮」、「講究選料做工」、「講究色香味形」、「講究花色品種」四大特色表現得淋漓盡致,並以魚鮮蝦蟹、粳糯稻米為主要食材,美食展現場共有六十道蘇州名菜。

  蘇式菜肴樣式豐富,如:雨後春筍、八寶葫蘆、可哥刺蝟、碧波金魚、農家玉米等幾道名菜,都是以不同食材搭配出實體模樣,將繪畫雕塑藝術融入料理中,做工維妙維肖,相似度極高,特別是「雨後春筍」,師傅用五花肉一片一片交疊包覆,層次與色彩分明,彷如真的竹筍。

  另外,姑蘇鹵鴨、叫花童子雞、松鼠桂魚、孔雀蝦蟹等料理,也是道地蘇州名菜。在金庸武俠小說中,這些蘇州名菜也是很常出現的喔!射雕英雄傳中有一段,黃蓉吵著郭靖,要靖哥哥帶她去松鶴樓吃「松鼠桂魚」,而在天龍八部、鹿鼎記中,主角也都曾到過松鶴樓用餐呢!
