It is understood that the original of chocolate truffles is derived from a Spanish princess married into the royal family of France. Later, she imported Spanish locally produced cocoa into France. The chefs of the French royal family in order to let the royal family and nobles to fall in love with the taste of chocolates made of cocoa, they came up with this brilliant idea by turning chocolate into a truffle-like shape; hence, they are named for their resemble to the truffle fungus.
In fact, 95 % of chocolate truffles selling in the market do not contain the truffle fungus, which means you practically cannot savour the taste of the truffle fungus at all. To further explain, there are only few confectionery shops that feature chocolate truffles that really have the taste of truffle fungus. First of all, truffles are vulnerable to the heat. When the temperature reaches above 90 degrees, the flavour will be evaporated very easily. Secondly, there is a limited selection of materials can be matched with truffles, so if you pick the wrong choice, it will cover up the aroma of truffles. Last, the consideration of the price cost plays the most essential role in any kinds of business. The price for the finest truffles is approximately NT$15,000 per kilogram, so truffles are considerably rare and precious ingredients.
The hostess of a well-known chocolate specialized shop in East District of Taipei, Ms. Yeh mentioned that ever since the chocolate truffles have been widely commercialized, the price becomes more expensive. She, therefore, recommended that consumers should pay attention to the product’s composition before purchase, so that they will not get their money wasted.
In short, chocolate truffles can be divided into three categories. The first one is that you can really taste the aroma of truffles; the second one is that its shape resembles to the truffle fungus; and the third one is the commercialized chocolate truffles, which taste nothing like truffles, nor look like truffles.
